Pea & Mint Fritters Recipe – The Eight Hours


This gluten free recipe from The Eight Hours is one of their most popular creations, and we can see why, it’s super easy to make, healthy and still filling. Not to mention insanely delicious, this is one to keep in your recipe book and whip out whenever you’re feeling lazy but need something healthy.

For the Fritters:
– 2 eggs
– 1 tbsp Chia seeds
– 200g peas
– 1 clove of garlic
– 3 heaped tbsp. rice flour
– 4g chopped up mint
– feta
– 1/2 lime (you’ll need the other 1/2 later)
– salt and pepper

For the dressing:
– 4 sprigs of fresh mint
– 1 clove of garlic
– 200g sour cream
– salt and pepper
– juice from 1/2 lime
– ¼ cucumber

First, beat the eggs in a large bowl and add in the chia seeds, leave this to soak for 5 minutes while you roughly mash up the peas a little in a bowl and dice up your garlic. Add in the peas, garlic, flour, mint, juice from the lime, crumble in the feta, season and mix well. Heat the oil in a pan and dollop in a nice blob of your mixture, fry for 2minutes until golden then flip over and repeat.
To make the dressing, simply thinly dice up your cucumber, mint and garlic then mix in a bowl with the sour cream. Squeeze in the lime juice, season and you’re good to go!

It literally is that simple, a few quick and easy steps and you’ll end up with the tastiest dinner, it’s healthy, it’s light, it’s pretty perfect. Knock up a quick tomato and red onion salad to serve with your fritters and then sit back and enjoy. Trust us you’ll make these again and again.
